
![]() I was trying to think of something interesting to make for breakfast yesterday morning while having a cup of coffee. We had just purchased a bunch of bananas to freeze for smoothies and banana pancakes quickly came to mind. Aaron suggested we try banana fritters and after a bit of searching online I found a good recipe here. I chose to follow the recipe, but make them into pancakes instead of fritters. This was mostly so that the meal was still kind of healthy :) The recipe is really easy to follow and is very similar to making banana cake in a way. Make sure you mash up the bananas really well. I use a hand mixer on high speed to do this. My mom once told me she did not blend the bananas enough and her banana cake tasted like it had snot in it (her words). Definitely don't want my pancakes to taste like that! I used freshly ground cinnamon and nutmeg from our trip to Dominica a few months ago. Nothing like fresh spices! After mixing everything together, simply bake like regular pancakes. The texture of these pancakes is very moist and dense because of the bananas. I am sure you could use less banana and possibly more baking powder to get a fluffier pancake but I liked the consistency. Add a little powdered sugar and maple syrup and prepare yourself for an amazing treat :) We had the leftover pancakes the next day with peanut butter. Yum!
